The problem: SyncToy not copying all files

Steps to copying all files and subfolders when syncing in Windows 7/10
Install and launch free AOMEI Backupper on your computer. Connect the external storage to your PC if you’d like to sync files to external drive.
1. In AOMEI Backupper, go to Backup and then scroll down to find File Sync.
2. Click on Add Folder.
3. Click Browse to add the folder you want to sync from (i.e. the left folder). By default, AOMEI Backupper will sync all subfolders. Uncheck the option if you have a different plan.
